Iron Ban and Witches

So according to the rules mages are penalised for every 4 lbs of iron they carry, now can they get around it using bronze or other materials? Also can witches use a forest wolf or dogs and other animals as familiars? Also what other stuff do the other traditions get, as they come across as under developed compared to the witch tradition.

Every non magic metal will cause the same effect on spellcasters. With the exception of precious metals which arent useful as weapons or armor.
Dog witches arent a thing, no. But some Dwarven Geodes (Dwarven Druids) have had dog familiars, while others had falcons.
Almost every tradition has one to three special artifacts. Witches have a familiar and a cauldron, mages have their staff, a crystal ball and a sword, jesters get a toy and a cap, bards have their instrument, sharlatans get a wand and a crystal ball, alchemists a bowl, druids a dagger and a (TBA) etc. In addition to unique rituals like curses, songs, druidical rituals etc

The 7 types familiars are just the most common ones. There is no rule against a witch having a different type of familiar, if the GM thinks it fitting. A too big or too mighty familiar will need the "powerful familiar" special ability though. This also applies for things like jaguars or big snakes as familiars.
(Not sure if that's the right translation or if it's in 5e rules already, but that's how it was in 4e and I doubt they change it.)

But keep in mind that it's not like in DnD, where you can jump from familiar to familiar. Having one is more akin to a family member or a soul brother/sister. Something you have to find and if you loose it, it's a great loss.

powerful familiar isnt an option any more. Running around with wolves,leopards or tigers as a witch never made sense anyway.

That's just one opinion.

Anyway, witches aren't confined to just the 7 most common familiars. Dogs, ferrets, seagulls, foxes etc. etc. are all possible as well, if they fit to the personality of the witch.

Edit: Apparently it's really not a thing anymore, but you can spend a bunch of AP to have a "mightier" familiar instead.
